A monthly dinner series in 2025 - 2026 with Australia’s most iconic wineries.

For one night every month, Milk Beach Soho will partner with an iconic Australian winery to showcase a selection of their wines alongside a bespoke three course sharing menu by Head Chef Alex Busca. 

Each evening will be hosted by Wilem Powell (Head Sommelier from 2022 to 2024 at Peter Gilmore’s seminal Sydney restaurant, Quay) alongside a representative ambassador, owner or winemaker from the winery. Spaces are limited with up to 20 seats per event across two large tables, providing an intimate setting for guests to indulge in the very best of Australian wine.

Toast Australia - Thistledown

Join us at Milk Beach Soho for the next event in our Toast Australia Series, celebrating Australia’s iconic wineries. A relative newcomer to the tapestry of South Australian wineries, Master of Wine Giles Cooke established Thistledown in 2010.

Sourcing fruit from Adelaide Hills, Eden Valley, Barossa Valley and McLaren Vale, Thistledown specialise in small scale wines made in a modern style, with a keen awareness of their sustainable practices in the vineyard.

Expect Giles’ stunning examples of old vine Grenache and energetic Chardonnay alongside a contemporary expression of Shiraz. We’re truly humbled to have Giles himself join us from South Australia for the night, no one is better poised to tell the Thistledown story.

The evening will feature a selection of Thistledown’s modern-style wines, perfectly paired with a three-course meal crafted by Milk Beach Head Chef Alex Busca. Toast Australia - Yalumba

Join us for an intimate evening of exceptional wine, community, and conversation as part of our Toast Australia series, with a special twist.

Yalumba is still one of the few estates raising its barrels by hand. The cooperage sits just behind the winery: stacks of staves, the warmth of toasted oak, and coopers who’ve been at it long enough to work by instinct. It’s the only facility of its kind in the southern hemisphere.

The same patience runs through everything they do. Over six generations, the family has drawn fruit from Eden Valley, Barossa and Coonawarra - places that shaped what Cabernet–Shiraz would become in Australia. Long before “sustainability” became a talking point, they’d already shifted to carbon-neutral.

Hosting the night is Stefan Neumann MS - one of the few Master Sommeliers working in the UK, and among the sharpest interpreters of Australian wine you’ll meet.

The evening will showcase a curated selection of Yalumba’s finest wines, perfectly paired with a three-course meal crafted by Milk Beach Head Chef Alex Busca. Spaces are limited to 20 seats across two large tables, providing an intimate setting for guests to interact with each other and the hosts.
